Cary St. last summer, Chum Chum Onigiri is the fourth venture of entrepreneur Hang Pham, who also owns Perception Organic Spa, Sen Organic Small Plate and its namesake Farmer’s Market. Richmond Magazine: How would you describe Chum Chum to a first-time visitor?

Cassandra Gossen: We are a boba tea and snack friendly place and offer onigiri, which are Japanese filled rice balls; bubble tea; organic options – and we’re eco-friendly. Our utensils, straws and cups are all biodegradable.

RM: What can you share about the owner of Chum Chum, Hang Pham?

Gossen: Mrs. Hang is absolutely amazing. She always treats everyone with respect. She knows how to lead and is very passionate about what she does.

RM: Tell me about some of your favorite snacks on the menu.

Gossen: The salted duck egg bao is my favorite. It’s a bun with pork, sausages, mushrooms and a duck egg.

Ikai Haynh: I think the chicken skewers, served with seasoned rice and kimchi, are underrated. Also the takoyaki. It’s a deep-fried octopus ball, and we top it with our signature Chum Chum sauce, bonito flakes and a choice of Kewpie mayonnaise – spicy or regular – and it’s really delicious.

RM: What is Chum Chum sauce??

Haynh: We sell it at the market. This is an organic, gluten-free soy sauce based sauce that we serve on many of our items, such as Chicken Katsu and Salmon in Garlic Butter. Ms. Hang likes to have lots of vegan options as well as anything organic.

RM: The store has a really unique and memorable design influenced by kawaii, the Japanese aesthetic of cuteness. Where does this vision come from?

Gossen: Ms. Hang just has a vision for her business. She wanted it to be very open, very friendly, so it’s really just her and her passion for her businesses. It’s very kawaii.

RM: What can you tell me about the people you meet here? Who are your clients ?

Gossen: Every time there’s an anime convention or cosplay, we’ll have a bunch of cosplayers, and that’s just the coolest thing because they’re so excited and they’re like, ‘Oh, you got onigiri, I see that in the anime.” We all have different types of customers – old people, young people, people who have lived in Japan and say, “I looked everywhere. I lived off of onigiri when I was in Japan,” and we get our regulars.

Haynh: We have a lot of people working in Carytown. They’ll be rushing here during their breaks to get their onigiri fix. We all love and support each other.

RM: I would like to know what you think makes Chum Chum Onigiri special.

Haynh: Being Asian myself and from northern Virginia, Chum Chum Onigiri is one of the few places I’ve been that sells vegan boba drinks, vegan milk teas, which is very unique. All of our ingredients, everything we use are all organic.

If eating more plant-based foods is a New Year’s resolution, it’s worth hanging out with Rooted.

Subtitled “Eat More Plants,” the fast-casual South Medford concept has seen strong growth since its debut in September. An online platform for pick-up orders or delivery through DoorDash makes it even easier for customers to add healthy salads, wraps, paninis and cereal bowls to their daily diets.

Whole foods define Rooted’s menu, which bases recipes around black beans and chickpeas, brown rice and quinoa, nuts and seeds, and a veritable cornucopia of fresh produce. For meat alternatives, there are old-fashioned mushrooms and tofu, as well as trendier jackfruit. Free-range eggs are even available for breakfast burritos.

Plant-based processed meat alternatives are particularly absent, and have recently received some negative attention for containing ingredients that are not, strictly speaking, healthy. Gravitating towards staple foods, if not necessarily vegan, I found something to pique my interest at Rooted.

Nuts and Blueberries with Quinoa and Baby Kale ($12.99) stood out from other salads on the menu. But I wondered about the freshness of blueberries during the cold season. The roasted chickpeas that made up the “summer cider” salad ($12.99) made for a good serving of protein alongside the pumpkin seeds. Other salads include the “green glow,” so named for its baby spinach and pea shoots, and the “sweet and spicy,” boasting candied jalapeno with portobello mushrooms and pear.

Thirsty and craving a ginger dip, I picked the “Beetlejuice” ($8) from Rooted’s line of freshly squeezed organic drinks. If the time had been earlier, I would have opted for the “Citrus Sunrise”, made with grapefruit, blood orange and carrot juice. Each is packaged in a 12-ounce bottle, presented in a self-serve cooler.

Also spiced with ginger, a 2-ounce ($4) “flu shot” promotes well-being with its dose of garlic oil and oregano. An “immunity kick” boost pineapple juice with turmeric, cayenne pepper and black pepper.

My salad came out generously topped with chickpeas and half an avocado.

Upon first tasting the salad with no dressing, I found the seasoning of the legumes so satisfying that I almost didn’t want the apple cider dressing, especially once I tossed in some of the rich avocado . Cucumber wedges complemented the crunch of the romaine lettuce, which made up most of the mixed greens, although I did find a few spinach leaves in the bowl.

The beet juice, enhanced with carrot, celery and lemon was slightly sweet and not too earthy. More than I needed in one session, I took the rest to drive home with the resolve not to spill a drop of the intensely pigmented liquid along the way.

A return visit later in the week with my partner arrived early enough to sample ‘citrus sunrise’, as well as some of Rooted’s breakfast dishes. I assumed my partner would gravitate to a breakfast burrito, which has four types on Rooted’s menu. Priced from $9.99 to $11.49, all offer scrambled tofu, though two scrambled eggs can be replaced with an additional $2.

But my partner surprised me with his choice of the “pina colada” smoothie bowl, the only one of Rooted’s four made with coconut milk. Almond milk is the base of Rooted’s namesake bowl with acai, as well as “berry-cherry” and “peanut butter-banana” bowls. Adding 18 grams of plant-based protein powder adds $3 to the $7.99 price of smoothie bowls.

A bowl may be the chosen format for about half of Rooted’s articles. Burrito toppings for breakfast and lunch can lose the tortillas and instead sit in a dish. Conversely, any salad can be prepared in a wrap. For $2.99, add a side salad, fresh fruit, guacamole with fries, or hummus with veggies to all of the above.

Served with your choice of side, panini — $13.49 to $16.49 — bookend portobello mushrooms, chickpeas, pulled jackfruit and nut butters. The Provolone and Gouda cheeses are dairy-free, and the mayonnaise and pesto are vegan.

Customers with even stricter dietary needs or more specific tastes can mix and match nearly 60 ingredients to create their own burrito, wrap, salad or bowl, for $9.99 per pound. Those who like variety can get half a panini and a side dish of hummus and veggies, plus fresh seasonal fruit for $11.99.

The fruit spilled quite a bit on the rim of my partner’s smoothie bowl, which also contained shredded coconut and gluten-free granola. The sliced ​​banana and blood orange overshadowed the flavor of the strawberries, which no doubt would shine brightly in the summer when the oranges waned.

Sweet and spicy, candied jalapenos were the star of my “foolproof” bowl ($11.99). With the substitution of scrambled tofu for jackfruit, the bowl mimicked the flavors of a breakfast burrito with black beans, guacamole, salsa and a creamy lime and cilantro dressing that adorned the rim of the bowl. plate in curls and swirls.

An egg lover that I am, I didn’t miss their texture, convincingly achieved by the fluffy scrambled tofu. The mild flavor of bean curd adapts to an even wider range of flavors than that of egg. Next time, I’d forgo the romaine lettuce for breakfast and build my own bowl with spinach, or skip the greens altogether and add cashew queso.

It takes a lot of vision to explore a barren place in a wilderness and dream that it could become the location of a resort with an international pedigree. It’s fair to say that 99% of Israelis have never even heard of Shaharut, an indescribable cluster of hilltop dwellings literally in the middle of nowhere; and there is not even a road connecting the hotel to the village.

Getting to Six Senses Shaharut can be tricky: the nearest airport is the new Ramon International Airport, which primarily serves Eilat, a tourist destination on the Red Sea; from there a car can be arranged for the 40-minute journey on two-lane roads.

Alternatively, one can travel about four hours from Tel Aviv and Israel’s main international gateway; the reward for time and effort are endless views of breathtaking scenic beauty. The fastest and easiest of all – if money isn’t an issue – is to get in by helicopter and land at the resort’s helipad.

Upon arrival, guests are treated to a welcome ritual at the Experience Center: a refreshing wet towel, a glass of water and delicious cookies. There is a brief orientation, followed by the first of many rides in electric golf carts that transport guests around the property; the friendly drivers of these small cars are on call throughout the stay.

Your first likely stop is your accommodation, of which there are a plethora of choices at Six Senses Shaharut: 48 suites and 12 villas, to be precise. In addition, there are three categories of the first and two categories of the second, plus the crème de la crème: the private reserve, a complex comprising a three-bedroom villa, a large swimming pool, an indoor and outdoor kitchen, etc.

The suites here are actually large bedrooms – which can still comfortably sleep three people – while the villas are one- or two-bedroom apartments with private pools (albeit without a kitchen). All guest units have spacious outdoor terraces with comfortable lounging furniture, like day beds; six suites have plunge pools.

Basic amenities here go far beyond what can be found at most five-star establishments, which include extremely comfortable queen-size beds (king-size in villas); user-friendly individually regulated air conditioning; in-room safe (but not large enough to accommodate laptops); smart flat screen TV with satellite and entertainment system; [Marshall] bluetooth speaker; and unlimited free WiFi and bottled drinking water. Plus, there are stylish wooden ceiling fans inside and out, as well as some quirky items that can be used freely during your stay (and purchased afterward): a yoga mat, a tote bag, canes and stylish hats.

The minibar area is richly equipped and stocked, with an espresso machine and capsules, an electric kettle with premium teas, two jars of free cookies, and crystal glasses of all shapes and sizes. Along with the standard refreshments kept cool in the mini-fridge, there’s an impressive bar stocked with fine spirits in full size.

The bathrooms are no less luxurious, with a separate bathtub and shower cubicle, as well as a toilet with its own door for more privacy; Hair dryer; dental and shaving kits; organic cotton bathrobe for him and her (again, free use during your stay) and Moroccan-style terrycloth slippers. The emphasis on sustainability is evident even in the hotel’s multiple restaurants, where plastic straws are banned in favor of thick bamboo straws. There must be more or less variety in the dining options, as there are no practical alternatives for going out to eat within a radius of several kilometers.

Meals of the day begin naturally with breakfast and the sumptuous complimentary buffet that can suit all tastes from simple to sophisticated and from the health conscious to self-indulgent. There’s fresh bread and pastries, plus hot and cold options, all washed down with natural juices and smoothies – plus, of course, freshly brewed hot coffee. Waiter service satisfying special orders completes the myriad of buffet selections.

Lunch and dinner are a la carte, and prepared under a number of dietary restrictions stemming from Jewish tradition: there is no pork or shellfish on any menu, and meat and dairy products will not be cooked together; this “kosher style” kitchen will meet the demands of most Israeli diners, although it does not meet more stringent standards to be categorized as true kosher.

The casual restaurant here is the Edom View Grill, which serves light meals during the day and has a weekly barbecue on Tuesday evenings. Its name derives from the beautiful view it offers over the Edom mountain range in neighboring Jordan.

The fine dining restaurant here is Midian, where menu items are labeled according to a wide range of nutrition alerts, from vegans and gluten-free to sugar-free and containing nuts or other known allergens. The quality of the food here is easily comparable to that of one of Israel’s leading restaurants, thanks to the expertise of the chefs and the care taken in sourcing the finest ingredients, from fresh locally grown vegetables to the superb beef of the region. Finally, the Jamilla Bar serves not only specially designed exclusive cocktails, but also a full menu of hot and cold tapas. I needed an experience to cheer me up after the mid-term stress so my partner and I headed back to White River Junction this weekend. Since we had such nice time at Tuckerbox, we thought we were seeing what else the city has to offer. After walking through the narrow one-way streets, filled with cars parked parallel to each side, we decided to visit a curious cafe on the corner of North Main Street: Juel Modern Apothecary.

“Apothecary? Who uses that word again? I thought as I approached the door of the building. The last time I saw that word was in my freshman year of high school reading” Romeo and Juliet. ”Yet it was half past ten in the morning and I needed a dose of caffeine.

When I first entered the building, Juel’s Gate was to my left, while Little Istanbul’s was sat to my right. The noise, colors and smell of spices coming from Little Istanbul, a gift shop, contrasted directly with Juel’s clean, plain white design. It was like a battle between tradition and modernity.

Juel was packed. It’s about as big as two triple dorms put together, and maybe a little too generous. The far wall was lined with hanging snake plants, spider plants, and succulents, while the one closest to the entrance had a small refrigerator with fresh fruit and homemade kombuchas. These two microcosms of vibrance highlighted the minimalist white walls and light-colored wood. Shelves with CBD products, beeswax, metal straws, and Abracadabra – a Woodstock-based coffee company – coffee beans lined the wall next to the barista’s counter.

The most interesting aspect of Juel’s design is the ceiling. It’s black with rods and pipes running through it, with tiny lights aimed at the tidy, immaculate cafe, as if it were a movie set. I think it captures the whole aesthetic of Juel – a staging perfectly crafted for millennial tastes.

As I soon found out, people know Juel for his coffee. As a heavy coffee consumer, I understood this recognition as soon as I approached the counter to place my order: right next to the cash register, as if to show off his credentials, was a standard espresso machine with ” La Marzocco “in bold red capital letters. This quality item inspired some confidence in their drinks when I placed my order.

While drinks make up two-thirds of Juel’s menu, they also serve food. The entire menu is vegetarian and adapts very well to gluten-free and dairy-free options. I ordered a Golden Latte with homemade cashew milk for $ 6.50, The Buzz smoothie for $ 9, a Superseed Energy Ball for $ 3, and an Avocado Kimchi Toast for $ 7.50. The total was $ 29, which seemed a bit pricey for the amount I received, but the aesthetic hinted at high prices.

The Golden Latte, an alternative latte – without espresso – made with “turmeric, coconut oil, black pepper and raw local honey”, came out in a beautiful handmade clay mug. The orange dots in the gray clay completed the design of the cafe, as well as the yellow latte itself. The cashew milk was silky and matte, exactly what perfectly frothy milk should look like, and it had no real flavor. When I took my first sip, however, all the flavors hit me at once. The texture was a bit grainy from the turmeric, but I found it to work quite well. The sweetness of the steamed cashew milk, along with its salinity, has helped balance out some of turmeric’s stronger tones. The deep sulphurous color of the drink piqued my curiosity, and I wondered how they had gotten the thick texture; it was like drinking fresh cow’s milk. This is the best alternative latte I have ever had, and for a dollar more than a ventilated frozen chai at Novack, it was well worth the price.

Then I switched to The Buzz smoothie, which the menu describes simply as “Abracadabra coffee, banana, dates, organic oats, cashews”. It arrived in a take-out plastic cup; however, I expected at least one drink, because the cup from the previous drink was so beautiful. The grayish-brown color didn’t make me like the drink at first glance, but the idea of ​​a coffee smoothie still interested me. Small pieces kept creeping up on the straw when I drank my first sip, which I enjoyed as someone who favors heterogeneous blends. The smoothie itself was slimy: not slimy enough to clog the straw, but slimy enough to coat your entire mouth. It would have been great if I had enjoyed the flavor of the smoothie. It was a bit too hot, which makes sense since it had a coffee base, but I assumed the banana and dates would have tempered that flavor note. For a $ 9 drink, the best of my whole order, it was disappointing.

Before starting with the Kimchi Avocado Toast, I tried the Superseed Energy Ball. It smelled almost nothing. Almost. I associated the slight smell with vinegar. When I bit into it, it looked like any other energy ball I had tried in the past. The same nutty flavors, the same sweetness. It was good, but nothing jumped out at me. Still, the coconut flakes helped leave a sweet aftertaste that I lingered on before the avocado toast.

The toast, consisting of “gluten-free bread, avocado, kimchi, sesame oil, toasted sesame seeds, and dulse flakes”, came in a clay plate that appeared to come from the same set as the mug. It wasn’t a large plate, so the amount of negative space only emphasized how small the portion was. The whole toast was about the size of a Novack cheese and egg sandwich. It still looked gorgeous: the toast, fully loaded with nothing spilling out, had reds, whites, and greens that played out on each other as with Tina’s Toast from Red Wagon Bakery. The dulse flakes added a beautiful chrome purple that elevated this dish beyond the dinner dish. The kimchi gave the toast an amazing taste which paired well with the sesame seeds and oil. Finally, the avocado, like a wave, washed away the flavors with its fat richness and left a calm and neutral aftertaste in my mouth. The bread, on the other hand, was a bit too soggy, too bad the experience was almost perfect.

The things that made this experience worth it were the Kimchi Avocado Toast and the Golden Latte. Even then, I struggled to justify the price of the toast in relation to the portion size. The cafe offers a relatively quiet experience, a bit more upscale compared to Starbucks or even Still North Books & Bar, but it all depends on whether you favor the millennial aesthetic. If you find yourself at Juel Modern Apothecary, I recommend ordering their alternative coffees and lattes. Whether or not you can justify the price of the food, I cannot guarantee that you will feel full by the end.

Larkspur resident and private chef Lorenzo Rios may be known in the city for his pandemic-born empanadas delivery business, but his goal is to take root deeper with a brick-and-mortar restaurant at the Larkspur city center. Rios launched a Kickstarter fundraising campaign last week and hopes to make his vision of an upscale, fast-paced, laid-back organic restaurant that he calls Marin Provisions a reality.

“Our goal is to increase the dining options in Marin with healthy, homemade items,” he wrote in a recent email. The financing it will raise will be used to obtain a lease; slight remodeling; hiring and training; and the purchase of a point of sale system, inventory, insurance and equipment (rotisserie, range hood, fryers and stove).

“Timing is the key to success,” writes Rios on his project page. “So with the right space and the right conditions, we think the time is right. “

Rios focuses on the storefront space of 250B Magnolia Ave. currently home to Posie Ice Cream, which owner and chef Kyle Caporicci plans to vacate at the end of July.

The menu will include organic roast chicken cured for at least 12 hours, sandwiches, paninis, and a few vegan, vegetarian and gluten-free options. Rios will include a few of his customers’ favorites like a Caesar salad that follows a 25-year-old secret recipe and the aforementioned empanadas with toppings such as Mexican birria; Jamaican beef or chicken; and spicy apple or pumpkin. It also plans to host meat and vegetarian paella evenings, as well as private multi-course seasonal dinners for up to 12 diners.

Rios has been a caterer and private chef since the early 2000s, when, shortly before the coronavirus shutdown, he decided to step down from his position as Team Leader of the Prepared Foods Department at Whole Foods in Mill Valley to create a small catering business and later empanadas and dinner delivery service.

The chef brings extensive experience to the initiative, from his training at L’Academie de Cuisine in Maryland and under the tutelage of renowned chefs such as Gérard Pangaud, José Andrés and Thomas Keller of Napa Valley’s flagship restaurant French Laundry. Their menu is packed with salads, tacos, burritos, and bowls derived from a combination of Californian and Mexican recipes that they say are made with only natural, sustainable ingredients and 100% protein free from hormones, steroids, and antibiotics.

What they tout is a healthy way to dine in a relaxed atmosphere for lunch and dinner. For those who know the area, Lota Veco can be found in the old Paradise Pizza place. They opened at the end of November.
