The art of fine dining
Chef Koustoudis tells us:
“The restaurant’s cuisine reflects the Mediterranean culinary tradition. The recipes on our menu are based on local Greek products and many with Protected Designation of Origin (PDO).”
The menu at GB Roof Garden Restaurant features dishes that unfold the creative imagination and rich experience of Michelin-award winning executive chef, Asterios Koustoudis. Together with chef de cuisine Nikos Mavrokostas and their dynamic team, they have inspired a year-round menu based on Mediterranean culinary tradition and the application of modern haute cuisine techniques.
Top quality fresh raw materials and endless inspiration are combined to compose a selection of mouth-watering dishes that will delight the palate and satisfy from the first bite to the last.
“Through our dishes we try to present the richness of our country to all visitors, while telling short stories of the place of origin of the products, the producers and perhaps the particularity of their transformation and their uniqueness” , says chef Koustoudis. GTP securities.
Vision of sustainability
A fundamental priority of the GB Roof Garden menu is its gastronomic philosophy which uses fresh seasonal ingredients. With this in mind, the chefs have taken a step towards domestic sourcing for the creation of the restaurant’s latest menu, exploring the bountiful harvest of the Greek countryside and sea.
With absolute respect for seasonality, the chefs pay tribute to Greek producers in order to support and honor their value. Fresh seasonal ingredients are used in the preparation of dishes with an emphasis on locally sourced organic produce from small producers and food provenance specifically indicated on the menu card.
smoked eel Arta, Messolonghi bottarga, Thessaloniki traditional ‘couscousaki’ pasta, Kozani red saffron, San Mihali cheese Syros, Greek rare breed of lamb and organic Greek beef are just a few of the local specialties on the GB Roof Garden menu.
Chef Koustoudis highlights a dish that has been on the restaurant menu for several years: seasonal fish marinated in citrus fruits and mastiha (a liqueur seasoned with mastic).
“It’s a simple recipe that hides an exquisite taste with simple and pure ingredients – like virgin olive oil and citrus fruits from the city of Argos – that make the difference,” he says, adding that customers are pleasantly surprised by the mastiha ingredient as a product as well as the uniqueness of its origin and use in cooking.
Chef Koustoudis tells us:
“I generally feel that through the restaurant’s recipes and products, visitors create memories that they describe when they return home to their loved ones. This confirms our vision of bringing Greek culinary philosophy to the world. Our culinary philosophy can play such an important role in best complementing the Greek term of hospitality.
Each meal ends with one of the restaurant’s many dessert selections! Award-winning pastry chef Arnaud Larher has designed the restaurant’s dessert menu which caters to the four seasons and expresses his creativity, passion, knowledge and imagination.
The chef recommends…
For the morning: Greek breakfast.
The restaurant’s Greek breakfast selections include pies of different origins with olive oil sheets and various toppings. For example, Sfakianopita (pie of Sfakia, Crete) with cream cheese. Selections also include spinach pie, bougatsa, various varieties of honey, cheeses from all over Greece and various strained yogurts made from cow’s, sheep’s or goat’s milk, and much more.
“It is a fact that the Greek breakfast has made the difference in the last years in the menu and we have included it in the breakfast buffet of our hotel and we are constantly evolving it”, explains the chef Koustoudis.
For the lunch, you can taste the Kakavia soup, cooked with daily shellfish and vegetables, served with crispy sourdough bread and a garlic olive oil sauce.
For dinner, guests can start with a homemade pumpkin ravioli with a ‘volaki’ cheese sauce from Andros Island and continue with an organic Greek black pork, roasted celeriac and raisin gnocchi and with black garlic.
