Together with chef de cuisine Nikos Mavrokostas and their dynamic team, they have inspired a year-round menu based on Mediterranean culinary tradition and the application of modern haute cuisine techniques.

Fresh seasonal ingredients are used in the preparation of dishes with an emphasis on locally sourced organic produce from small producers and food provenance specifically indicated on the menu card.

Chef Koustoudis highlights a dish that has been on the restaurant menu for several years: seasonal fish marinated in citrus fruits and mastiha (a liqueur seasoned with mastic).

“It’s a simple recipe that hides an exquisite taste with simple and pure ingredients – like virgin olive oil and citrus fruits from the city of Argos – that make the difference,” he says, adding that customers are pleasantly surprised by the mastiha ingredient as a product as well as the uniqueness of its origin and use in cooking.

Each meal ends with one of the restaurant’s many dessert selections! Award-winning pastry chef Arnaud Larher has designed the restaurant’s dessert menu which caters to the four seasons and expresses his creativity, passion, knowledge and imagination.

The chef recommends…

For the morning: Greek breakfast.
The restaurant’s Greek breakfast selections include pies of different origins with olive oil sheets and various toppings. For example, Sfakianopita (pie of Sfakia, Crete) with cream cheese. Selections also include spinach pie, bougatsa, various varieties of honey, cheeses from all over Greece and various strained yogurts made from cow’s, sheep’s or goat’s milk, and much more.

“It is a fact that the Greek breakfast has made the difference in the last years in the menu and we have included it in the breakfast buffet of our hotel and we are constantly evolving it”, explains the chef Koustoudis.

For the lunch, you can taste the Kakavia soup, cooked with daily shellfish and vegetables, served with crispy sourdough bread and a garlic olive oil sauce.
